WEDNESDAY'S SUMMER SUPPERS

Mini-Meat Loaves (from Cooking Light)

1/2 c. ketchup
1 1/2 T mustard
1 # ground sirloin (this is for lighter-use whatever hamburger you prefer)
1/2 c. finely chopped onion
1/4 c. seasoned breadcrumbs
salt
pepper
1 egg-lightly beaten


Mix ketchup & Mustard-set aside about 2 1/2 T
Combine everything else, mixing well with hands

Divide into 4 portions
Form loaves
place in pan (I coat with cooking spray)
brush remaining ketchup/mustard to cover loaves
Bake at 400 deg for 25 minutes


WA LAH-supper
I coarsely chop my onions-we like the crunch
I also don't measure exactly-just eyeball.

Supper took about an hour to prepare from start to finish.
Meat Loaf-Cheese Grits-Green Beans

I like this since you don't have meat loaf to look at for 3 days AND they are delicious!

Another night and most of the day of rain. I AM NOT COMPLAINING! I welcome change from the drought we have been experiencing. When the rain stops, it is like walking into a sauna when you step outside. Went to aerobics today, but will be out in the dark early morning hours tomorrow to run-once again. My body has enjoyed the break!

I love mini meatloaves.......there is also a good recipe on allrecipes.com. I have the stuff to make cheesy grits but haven't done it yet. I like the cheesy but not uncheesy.
