WEDNESDAY'S SUMMER SUPPERS

When I took some cooking classes, the chef stuck his nose up in the air when he announced that Southern women thought cooking was mixing a can of soup with anything and creating a dinner. Definitely-A FOOD SNOB! He needs to just get over it-some of those soup concoctions are quite delicious. Tonight's recipe is one of those easy-but yummy dinners. I make this about once a quarter and we enjoy it every time.

RITZY CHICKEN

1 1/2 Roll Ritz Crackers
1 stick butter(I am a snob about this-I always use REAL butter-no substitute for the taste)
2 c. diced cooked chicken (tonight I used a deli chicken since I was in a hurry-the best taste might come from a hen that you have cooked and saved your own broth)
1 c. chicken broth
1 can cream of chicken soup
8 oz sour cream (my brush at healthy eating included using light sour cream)
Melt the butter & mix well with cracker crumbs. Put 2/3 crackers in bottom of 9 x 13 greased pan

Mix liquids well

Place diced chicken over cracker crumbs

Spread your liquid mixture over

Sprinkle remaining cracker crumbs on top.
Bake at 350 deg for 30 minutes.

Wa-LA- Easy supper & fresh summer corn as a side.

Note to readers-How does Mother Nature know where I-20 is? The weatherman is always announcing that we will get rain south of and up to I-20. Most of the time he is right. Unfortunately we live 3 miles north of I-20. How does this happen? It can be pouring rain at BC's office 1 mile South of I-20 and the sun shining at our home. I personally believe in the conspiracy theory! Somebody is conspiring to have me pulling water hoses ALL SUMMER!

I will give this a try....just tried a chicken recipe (sis,Julie said her kids like this) where you mix mayo and parmasian cheese together and spread on top of the chicken and then sprinkle Italian bread crumbs on top...sorry no soup in this one....tried it out on the Boersmas. Rachel said it was safe to eat...haha.
