Ritzy Chicken

For my sweet niece, Adrian &
NO, Kim--I have NO secrets!

1 1/2 rolls Ritz crackers-finely crushed (I leave them in the sleeve and just knead the package)

1 stick butter ( I ALWAYS use the real thing)

2 c. diced chicken (I don't measure--usually use a lemon/pepper rotassarie chicken from deli)

1 c. chicken stock

1 can cream of chicken soup

8 oz sour cream

seasonings to your taste--always pepper--sometimes i get carried away and become wild and crazy with lots of different seasonings.

Melt butter & mix with cracker crumbs

Put 2/3 crackers in Pam sprayed 9 x 13 dish

place chicken

Pour mixture of remaining over

Sprinkle with rest of crumbs

350 degrees 30 minutes

Serves 4 really hungry or 6 normal eaters.
This easily doubles!

Thank you so much!! I have gotten it off your food blog in the past, but it seems to have disappeared??!! I like making this for others. We made for one of Abby's teachers for teacher appreciation week this week at WMS. Also yummy!
